How to brew

The Clever Dripper combines full-immersion brewing, like a French press, with paper-filtered clarity, like a V60. A weight-activated valve holds the water in the chamber while it steeps, then releases the brewed coffee when you set it on your mug. It's one of the most forgiving brewers there is — hard to get wrong.

Step by step

  1. Fold and insert a paper filter, rinse it with hot water and drain by resting the dripper briefly on a cup.
  2. Pour 300g of hot water into the empty, sealed dripper first — this stops fines settling at the valve and clogging the drawdown.
  3. Add 18g of medium-ground coffee on top and gently stir to submerge all the grounds.
  4. Pop the lid on to hold the heat and steep undisturbed for about 2 minutes.
  5. Give the top crust a gentle stir to send the floating grounds down.
  6. Set the Clever on your carafe or mug — the valve opens automatically and draws the coffee through the paper, finishing around 3:30–4:00.

Advanced: immersion slows after two minutes, so you can safely extend the steep to 5–6 minutes for a higher extraction without pulling harsh, bitter notes.

Troubleshooting

  • Sour or thin? Grind finer, use hotter water, or extend the steep.
  • Bitter or harsh? Grind coarser, cool the water slightly, or shorten the steep.
  • Slow, stalling drawdown? Add the water before the coffee, and grind a touch coarser.
  • Weak? Use a little more coffee (a lower ratio).
