What Is the Fellow Aiden?
The Fellow Aiden Precision Coffee Maker is an automatic drip coffee machine designed to deliver pour-over quality results at the push of a button. Launched in July 2024 by Fellow — the San Francisco-based brand behind the Stagg EKG electric kettle and the Ode burr grinder — the Aiden is Fellow's first foray into batch brewing.

Design and Build
The Aiden has a compact, square footprint measuring 227 x 227 x 304.8 mm (L x W x H), and is designed to fit comfortably under standard kitchen cabinets. It is available in Matte Black and Matte White colourways.
The machine is constructed from a combination of high-quality, food-grade BPA-free plastic, stainless steel, and silicone. Its minimalist exterior is anchored by a colour display screen and a single rotary dial, which handles all on-machine navigation. A silicone seal around the top of the machine is designed to protect overhead cabinets from steam damage, and an integrated cord wrap keeps the worktop tidy.
The machine does not include a hot plate. This is a deliberate design decision: hot plates continue to apply heat to coffee after brewing, which can cause bitterness and burnt flavours. Temperature Control
At the heart of the Aiden is a PID (Proportional-Integral-Derivative) temperature control system — the same class of technology used in commercial espresso machines. The system maintains water temperature within ±1°F of the user's specified target throughout the entire brew. Unlike heating elements that simply bring water to a rough temperature, Aiden's spiral heating architecture can switch temperatures mid-brew without changing the flow rate of the water, allowing for temperature profiling across different phases of the brew cycle. This level of precision has a direct impact on extraction quality: too-cool water under-extracts and produces flat, sour results; too-hot water over-extracts and causes bitterness.
The Dual Shower Head
The Aiden uses a dual shower head system that distributes water evenly across the entire bed of coffee grounds. The system automatically adjusts its distribution pattern depending on whether a cone basket or a flat-bottom basket is in use. Even saturation of the grounds is critical to consistent extraction — concentrated or uneven water flow creates channels through the coffee bed, leaving some grounds under-extracted and others over-extracted. The dual shower head addresses this mechanically, without requiring any manual technique from the user.
Brew Baskets: Single Serve and Batch
The Aiden ships with two interchangeable brew baskets:
Cone basket (#2) — designed for single-cup brewing, compatible with Melitta #2 cone filters. This is the basket to use when brewing for one person, as the geometry ensures proper water flow at lower volumes.
Flat-bottom basket — designed for batch brewing up to 10 cups, compatible with Melitta 8–12 cup basket filters. This basket suits the full carafe capacity and is the right choice when brewing for multiple people.

Bloom Cycle
One of Aiden's core brewing features is its timed bloom cycle. Blooming refers to the initial pre-wetting of coffee grounds before the main brew begins. When hot water first contacts freshly ground coffee, it causes CO₂ trapped within the grounds to escape — a process known as degassing. If brewing begins before this degassing is complete, CO₂ bubbles can interfere with water absorption, leading to uneven extraction.
The Aiden's bloom cycle pre-wets the grounds and then pauses for a programmable period — typically 30 to 45 seconds — before the main brew begins. The bloom ratio (the amount of water used relative to the total dose) and the bloom duration are both adjustable. Built-in presets set these values automatically based on roast level: lighter roasts receive a longer bloom to account for higher CO₂ content, while darker roasts use a shorter bloom.
Brew Modes
The Aiden offers two principal brewing modes:
Guided Brew
Guided Brew is Aiden's precision mode. The user selects a roast profile (light, medium, dark, or cold brew), and the machine calculates the ideal water volume, temperature, bloom duration, and pulse settings automatically. The machine's display guides the user on exactly how many grams of ground coffee to use. All variables can be manually adjusted and saved as custom profiles. The controllable parameters are: brew temperature, brew ratio, bloom ratio, bloom duration, bloom temperature, number of pulses, time between pulses, and pulse temperature.
Instant Brew
Instant Brew operates like a conventional automatic drip machine. The user fills the water tank and the basket with their preferred amount of ground coffee, and the machine brews until the tank is empty. No measurements or settings are required. This mode is suited to users who want a fast, uncomplicated cup with no configuration.
Cold Brew Mode
In addition to hot brewing, the Aiden includes a dedicated cold brew mode. Rather than the traditional overnight steeping method, the Aiden uses a different approach: a hot bloom phase first pre-wets the grounds to accelerate the release of solubles, before transitioning to a slow drip of cold or room-temperature water. This produces smooth cold brew concentrate significantly faster than steeping. Fellow states the process takes considerably less time than conventional cold brew preparation.
Brew Profiles and the Fellow App
The Aiden supports fully customisable brew profiles — user-defined recipes that store a specific combination of temperature, ratio, bloom settings, and pulse parameters. Profiles can be created and saved directly on the machine or via the Fellow companion app (available on iOS and Android).
The app connects to the Aiden via Bluetooth and provides the following functionality:

Maintenance and Descaling
The Aiden tracks water usage internally and displays an alert after approximately 150 litres have passed through the system, at which point descaling is recommended. Fellow advises descaling every three months under normal use, or more frequently — every 2 to 3 weeks — in areas with hard water.
The descaling process is handled through a dedicated mode in the machine's maintenance menu, and is compatible with standard liquid coffee machine descalers. The brew baskets and carafe should be hand-washed with warm, soapy water after use. The carafe should not be placed in a dishwasher, as this can damage the insulation.
Water Quality
Fellow recommends using water that is neither excessively hard nor completely mineral-free. Very hard water accelerates scale build-up and reduces the interval between descaling cycles. Distilled or completely demineralised water, on the other hand, can cause internal damage to the machine over time. Filtered tap water or a lightly mineralised bottled water is recommended for optimal results and machine longevity.
